Hotel Williamsburg a new North Brooklyn hotel/condo with a rooftop bar, swimming pool, and views of the Manhattan skyline is soon to open in October. Toby Maloney (The Violet hour Chicago) is heading the cocktail program for the property.
This is what he had to say to TONY
What are you working on right now? [My company, Alchemy Consulting,] is working with the Graves hotel group.… We are doing four bars for them at Hotel Williamsburg on 12th and Bedford. We are doing classic cocktails in the lobby, food-friendly cocktails in the restaurant, Streets. And then light, refreshing, cocktails on the roof deck. The view from up there is amazing. And then when the pool opens, thoughtful, easy-drinking libations to go with a suntan.
The hotels website just went live showcasing a Brooklyn driven experience with their retro amenities: vinyl library and vintage style record players in the rooms, magnums of Brooklyn Brew at the Watering Tower Rooftop Bar, coffee from the oldest family-owned artisan coffee roaster in New York at the lobby café and employees will wear uniforms designed by Brooklyn Industries. The restaurant Pillar & Plough, run by chef Andres Grundy will dispatch composed small plates (vegetable tarts with crème fraîche and basil) and whole-animal feasts (suckling pig with caramelized spring onions and smashed potatoes) from an open kitchen.
With all this features it seems Hotel Williamsburg is trying to “out hipster” The Ace hotel which has The Breslin (cocktail menu) and The Standard (cocktail menu) with a very aggressive baiting right out of the gate.
