Former Death and Co. bartender and current cocktail and hospitality consultancy Proprietors LLC Alex  Day prepares a “Heads Up” cocktail by infusing Dry vermouth with watermelon using a iSi canister and N2O for a rapid absorption of the flavor into the Dry Vermouth.


HEADS UP

2-1/2 ounces watermelon-infused blanc vermouth
1/2 ounce Aperol
1 teaspoon acid phosphate
Soda water
Grapefruit slice

Equipment:
iSi or other cream whipper
2 standard N2O cartridges
