Sean Muldoon, former head bartender of the Merchant Hotel in Belfast has opened a new bar in the Financial district, “The Dead Rabbit” where he tells NYTimes that ” We wanted to do a bar that brought together that cocktail culture with a pub. We found a 1820 town house in the Financial District, made the ground floor a workingman’s tavern, the kind Irish immigrants would have found here in the 1850s, and the upstairs a seated bar, with 72 cocktails from the 17th, 18th and 19th centuries. We’re trying to tell a historical tale.”
